Chocolaty Oatmeal Cake

This is a recipe passed on by my sister Allison. She and her friends made little bags with the dry ingredients perfect for gifts. Put the dry ingredients in a jar or sealed in a plastic baggie enclosed in a fabric goodie bag. Don’t forget to include the instructions.

Chocolaty Oatmeal Cake is almost like a sticky dessert or bread pudding similar to what you would find in the UK.

Cake:
1 1/4 cups Boiling Water
1 cup Quick Oats
1/2 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/3 cup flour
1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/2 tsp

Preheat oven to 350 degrees F. Mix water, oats, and butter & let stand for 15 minutes. Add remaining ingredients together in a bowl. Add oatmeal mixture to the bowl and mix well. Bake in an 8 x 11 casserole dish for 30 minutes.

For the Icing:
1/4 cup butter
1 cup brown sugar
1/4 cup evaporated milk
powered sugar

Melt ingredients together in saucepan and cool. Add powered sugar until thick enough to pour over cake. Pour over HOT cake! Use a toothpick to poke holes throughout the cake so that the icing sinks in.

  • this cake is awesome! i used whole wheat flour that we ground together at a ‘learn how to use wheat’ night a church. we had prepared a brown bag with everything else ready and the guest had to grind their own wheat with different grinders. it was a fun night but i was skeptical about this cake till i tasted it. you don’t even need an icing. it makes its own when baked. again awesome!
